2017, Fino (Palomino Fino) from a project from Mario Rovira and Bodega Zuleta. Even though I’m inlove with zesty crispy whites, this makes me smile. It had 7 months in old sherry-oak barrels so it comes with a good amount of sherry character. On its third day, it shows still the lightness (12,5%) and at the same time the bold aroma-palate: vanilla, hazelnut-cream (hello, my ancestors again!), quince essence and a touch of manhattan-cherries. It has a stunning body. Layers of aromas. The acidity is not sticking back.
