There’s something captivating about Les 7. It’s not charming or friendly, it’s challenging yet also one of the easiest Champagnes for food pairing. It stands out as an incredible food wine with a strong, proud savory character. Not overly creamy on the palate, which I personally adore,is Champagne without malolactic fermentation: elegant, extremely well-tailored, deep. Notes of sesame seeds, spices like cumin and sage, yet with lots of freshness, rhubarb, citrus and linear salty acidity. Degogment in 2013, what impresses me is its use of 50% perpetual reserve and still delivering such a strong, linear expression with 50% current vintage, still terroir-driven. Isn’t it one of the most interesting Champagnes from Vallée de la Marne? Still not everybody’s cup, unless you are having a dinner party. Les 7 alone redefines how we think about aging vibrant, elegant bonedry Champagnes. An aged Les 7 is always an intriguing, intellectual wine.
